Overnight Chocolate Éclair Icebox Cake


All the dreamy layers of a classic chocolate éclair — silky vanilla cream, delicate pastry, and rich chocolate — but with zero baking required. This fridge cake practically makes itself overnight, transforming simple ingredients into a show-stopping dessert that tastes like it came straight from a French patisserie.

INGREDIENTS

  • 2 packages instant vanilla pudding mix (3.5 oz each)
  • 3 cups cold milk
  • 8 ounces whipped topping (Cool Whip), thawed
  • 2 sleeves graham cracker squares
  • 16 ounces tub chocolate frosting

STEPS

  1. Make the cream filling: In a large bowl, whisk together 2 packages instant vanilla pudding mix (3.5 oz each) and 3 cups cold milk for about 2 minutes until thickened and smooth. Gently fold in 8 ounces whipped topping (Cool Whip), thawed until fully incorporated and fluffy. Set aside.
  2. First graham cracker layer: In a 9×13-inch dish, lay down a single even layer of 2 sleeves graham cracker squares, breaking pieces as needed to fill any gaps completely. This is your foundation.
  3. First cream layer: Spread exactly half of the cream filling evenly over the first cracker layer. Use a spatula to smooth it all the way to the edges.
  4. Second graham cracker layer: Add a second complete layer of 2 sleeves graham cracker squares directly over the cream, pressing down very gently.
  5. Second cream layer: Spread the remaining cream filling evenly over the second cracker layer, smoothing to the edges as before.
  6. Third layer & first chill: Finish with one final layer of 2 sleeves graham cracker squares on top. Cover the dish with plastic wrap and refrigerate for at least 45 minutes to let the pudding set firmly.
  7. Add the chocolate top: Remove the lid and foil seal from 16 ounces tub chocolate frosting. Microwave for 15 seconds until just soft enough to stir and spread. Remove the plastic wrap from the dish and pour the frosting over the top, spreading it into a smooth, glossy layer.
  8. Overnight chill: Cover again with plastic wrap and return to the fridge. Let it chill overnight — this is where the magic happens as the crackers absorb the cream and soften into dreamy cake-like layers.
  9. Slice & serve: Slice into squares and serve cold. Watch it disappear.

Pro tips:

  • The longer it chills, the better — overnight is ideal, but 24 hours is even more magical. The graham crackers fully transform into a soft, cake-like texture you won’t believe.
  • For a homemade touch, swap the store-bought frosting for a simple ganache: melt ½ cup heavy cream with 1 cup dark chocolate chips and pour over the top.
