Sun-Kissed Celery — A Mediterranean Garlic & Lemon Sauté


Don’t underestimate celery. In Mediterranean kitchens, it’s transformed into something quietly brilliant — sautéed in golden olive oil with fragrant garlic, brightened with fresh lemon, and finished with herbs. INGREDIENTS

  • 1 large bunch celery, washed & cut into 2-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 1 small onion, finely chopped
  • 1 lemon, juiced
  • 0.5 teaspoons sea salt
  • 0.3 teaspoons black pepper
  • 0.5 teaspoons dried oregano or thyme
  • 2 tablespoons fresh parsley or dill, chopped
  • 0.3 teaspoons chili flakes (optional)
  • 0.3 cups water

STEPS

  1. Prep the celery: Trim the base of 1 large bunch celery, washed & cut into 2-inch pieces, remove any damaged outer stalks, and cut into even 2-inch pieces. Uniformity helps everything cook at the same rate.
  2. Soften the onion: Heat 2 tablespoons extra-virgin olive oil in a wide skillet over medium heat. Add 1 small onion, finely chopped and cook for 2–3 minutes, stirring occasionally, until softened and translucent.
  3. Bloom the garlic: Add 3 garlic cloves, thinly sliced to the pan and stir constantly for about 30 seconds — just until fragrant. Watch it carefully; golden is perfect, burnt is bitter.
  4. Add celery & season: Add the celery to the pan along with 0.5 teaspoons sea salt, 0.3 teaspoons black pepper, 0.5 teaspoons dried oregano or thyme, and 0.3 teaspoons chili flakes (optional) if using. Toss everything together so the celery is well coated in the oil and aromatics.
  5. Simmer until tender: Pour in 0.3 cups water, then cover the pan and reduce the heat to medium-low. Cook for 10–12 minutes until the celery is tender but still holds a slight crisp bite.
  6. Finish with lemon: Remove the lid, squeeze in 1 lemon, juiced, and let everything cook uncovered for 1 final minute. The lemon lifts all the flavors and ties the dish together.
  7. Garnish & serve: Transfer to a serving plate and scatter over 2 tablespoons fresh parsley or dill, chopped. Add feta crumbles or toasted nuts if desired. Serve warm or at room temperature — both are equally delicious.
